Here are my three favorite holiday cookie recipes. The first two are pretty straightforward cookies. The last is a traditional German cookie that does involve some specialized ingredients that you really can't do without.

Ginger Cookies with a Bite. 
This was the very first cookie recipe I adapted and took the time to write out way back in college. It is a true ginger lover's cookie with 3 forms of it in the recipe!

The cookie you will not be able to stop eating: Oma's Cookies. 
Such a simple recipe. Get out your cookie cutters and decorations-my three year old wanted rainbow sprinkles...or they are absolutely delicious just plain. Do make sure to roll them thin, like 1/8". They do brown quickly so keep an eye on the oven. I easily ate 10 the day we made them. Good thing its a pretty large batch. This recipe is from my great grandmother, who is my daughter's namesake.

Traditional German Lebkuchen
Maybe you've had these spiced cookies from a package around Christmastime. (Trader Joes does make a pretty good store bought option-especially the chocloate covered version). But homemade is hands down the best way to go for the perfectly dense, soft, hearty, almost brownie-like textured cookie. Eating one is kind of like eating a meal. My mom has a food blog and here is the link to her famous Lebkuchen recipe. You will need some special ingredients that can often be found at a Eurpoean store or ordered online. Check out her other recipes too while you're at it.
